After a bit of thought (and searching my shelves, LibraryThing and GoogleBooks), here are a few more suggestions. I threw in a couple of 6 volume ones that are somewhat under the radar.

Paradise Kiss (Ai Yazawa) - 5 volumes
Straight-laced Yukari ends up modeling for wacky fashion/art-school crowd, and falling for leader of the group (we screened this at Metro, IIRC).

WISH (CLAMP) – 4 volumes
A man rescues an angel who in return, offers to grant him a wish. He says he has everything that he would ever want, so the angel decides to stay with him until s/he finds him something to wish for.

Fujoshi Rumi (Natsumi Konjoh) – 2 vol.
Rumi Asai is a plain-jane high-school freshman. She’s also a rabid yaoi fangirl and doujinshi artist who spends her time thinking of nothing but pairing up the two hottest guys in her class - one of whom has a crush on her.

Doubt (Izumi Kaneyoshi) – 6 vol.
Ai-chan has vowed to shed her dumpy junior-high self and begin high-school as the prettiest, most popular girl in class. But she soon learns that superficial beauty isn’t everything.

Absolute Boyfriend (Yuu Watase) – 6 vol.
Shy high school student Riko Izawa aches for a boyfriend but guys just won't look her way. Then one day she signs up for a three-day trial of a mysterious "lover figurine," and the next thing she knows, a cute naked guy is delivered to her doorstep--and he wants to be her boyfriend!Has Riko died and gone to heaven? The cute naked guy turns out to be smart, super nice, stylish and a gourmet chef. Plus, he looks like a million bucks.... Trouble is, that's about what he's going to cost Riko because she didn't return him in time!

Imadoki! (Yuu Watase) – 5 vol.
For Tanpopo Yamazaki, life at the elitist Meiô Academy seems way out of her league. The daughters of wealthy families snub her; other students make light of the fact that she actually tested into Meiô instead of relying on family connections, and the cute boy she saw tending a dandelion the day before wouldn't even acknowledge her existence. Hoping to make friends and have some fun, Tanpopo starts up a gardening committee, but will this help her survive in a school where superficiality and nepotism reign supreme? IMA DOKI follows the trials and tribulations of a budding horticulturist as she makes her way down the winding road to friendship. From Yû Watase, one of Japan's most beloved shô jo artists, IMA DOKI packs comedic charm and heartfelt antics into an adorable bouquet of whimsical fantasy.

Suki (CLAMP) 3 vol.
Hina's new high school substitute teacher, Shiro Asou, also happens to be her new neighbor, and she is beginning to develop feelings for him.

Legal Drug (CLAMP) – 3 vol.
By day, Kazahaya and Rikuou are two ordinary pharmacists; by night, their boss has them filling special prescriptions for clients with ailments that can't be cured using ordinary elixirs. With cameos from the cast of "Suki," this CLAMP series is a perfect dose of mystery, psychic powers, and those ornately drawn characters the femme-four creators are famous for.

Alichino (Kyou Shurei) – 3 vol
When a young woman searches for an Alichino, beautiful creatures who grant wishes at a price, she meets Tsugiri, a young man who has a mysterious connection to the rare creatures, a connection that puts him and everyone around him in grave danger.

Otogi Zoshi – 2 vol.

When the Imperial Court decides to send Raikou, a famous samurai, to recover a legendery gem to save the capital of ancient Japan, Raikou falls ill to disease and his youngest sister, Hikaru, decides secretly to make the journey in his place.
